Brine shrimp (Artemia sp.) are tiny crustaceans harvested from solar evaporation ponds and are rich in proteins, lipids, and carotenoid pigments (bright yellow, red, and orange colors). Their ability to produce dormant eggs, known as cysts, has led to extensive use of brine shrimp in aquaculture and the ornamental fish industry. Freeze-dried foods have had most of the water removed for prolonged stability and storage, eliminating the need for preservatives while maintaining most of the original product's flavor, color, texture, and nutritional value. Freeze-drying is a process where the product is set on shelves in a drying chamber and frozen. Once frozen, the air is removed from the chamber by a vacuum pump, and the shelves are heated.
